I have all my paints, brushes, and minis in several cases, and all of those in a gym bag to keep them together, and make it easier to carry. Is it acceptable to bring the whole bag into the con?

Sure, lots of other people do it. As long as you are using it, people won't mind. Just don't expect other people to watch it for you. Nobody is likely to mess with it, but if you leave it someplace where it's in the way someone is likely to move it where it's not in the way.
